I admit… baked chicken day after day can get old. So I always try to find new ways to dress it up.
Here’s my most recent recipe:
red bell pepper (cut into bite-sized pieces)
zucchini (cut into bite sized pieces)
olive oil (for in the pan)
3 tbsp lemon juice
salt and ground pepper (to taste)
1/2 C plain yogurt
1.5 tsp ginger
1/2 tsp each cinnamon and cumin
(**I adapted it from a grilled spicy kebab recipe from Fitness magazine)
Combine veggies with 1 tbsp lemon juice, salt, and pepper
In another bowl, combine yogurt, spices, and left over lemon juice
Coat chicken in yogurt mixture, place in pan with veggies and roast in oven at 400 degrees for approx. 20 min
**I made one on the stove top to save time and it was just as good! I served it with the veggies and brown rice.
