Heads up/apology

20 Oct

Just wanted to post quickly. Future hubby gets home today (YYYAAAYYY) which kicks off a crazy pre-wedding week, followed by the wedding, our honeymoon, and moving to Japan. So I want to apologize now for the fact that I will be very MIA over the next month. I’ll do my best to update but no promises. 🙂

I will def. pick back up consistently once we’re settled in Okinawa with lots of pictures from our adventures!

Happy Wednesday! Halfway through the week and 3 days until future hubby gets back to the states!

First of all, thank you to everyone who has voted already! I moved up from 50 to 11th in one day so, please keep voting! Apparently the link changes based off your place, which was poor planning on their part (I think). So here’s today’s link:

Fitness Competition Voting

I’ve discovered that October seems to be the hot month for the fitness magazine/websites contests. Oxygen Magazine is doing something similar, as is Bodybuilding.com (which I also entered to be a spokesperson for them!) So, if anyone else is interested… now you know 🙂

But, I mentioned changes… my wedding is coming up next Saturday! And we have finally figured out (after months of back and forth because of military orders etc.) that I will be joining hubby in Okinawa, Japan after the wedding. Which I am REALLY excited about. I think it’ll be really fun and who knows, maybe I’ll find some great healthy Japanese recipes to post from there! Aside from the obvious reason of wanting to actual live with hubby once we’re married… a girl could do worse:

 

I took that picture last May when I went to visit him, it’s beautiful out there. Anyway, had physical therapy this morning so did side lunges on a BOSU, squats, and a lot of stability exercises for the injured foot. Go back on Tuesday before the wedding for what will probably be my last time (mainly because I’m getting married and going on my honeymoon!)

 

Yesterday I did basically a total body workout but focused on arms:

Warm up with a 2min rotating plank (10 sec middle, 10 left, 10 middle, 10 right… so on)

20 Bicep Curls

20 Rows (with dumbbells)

20 overhead tricep extensions

20 crunches with weight

40 Ab “bicycles”

*3 sets– my abs killed by the last set of bikes

20 Low Flys

10 squats

12 chest presses

*2 sets

20 hip extensions w/ ankle weight

20 bridges

20 skull crushers

*2 sets

Side lunges and high heels!

My physical therapist has said that basically anything that doesn’t hurt I’m cleared to do… and if it does hurt, stop and try again a few days later. So we’re working into side lunges and even, apparently, working my way back into wearing heels so I can keep the shoes I bought for the wedding! Guys, I realize that might not seem big to you but trust me, I spent way too long trying to find the “perfect” shoes.

This morning I had physical therapy and then just did a quick ab workout but I wanted to post yesterday’s since it was a leg focused workout.

25 squats– the last set I had to not go as low, I’m trying to listen to my body and back off when it starts to hurt

10 split lunges/leg

*2 sets

20 calf raises

10 side lunges/leg

20 sumo squats

*2 sets

20 hamstring bridges

20 leg lifts

15 dead lifts to bicep curl

*3 sets

20 lateral shoulder raises

20 front shoulder raises

20 Russian Twists/side

*3 set, changing the oblique exercise each time

As I go through things and when I’m in PT, it is definitely getting stronger but the dynamic movements (pushing through a lunge etc) are still very challenging. Keep sending good thoughts my way please 🙂 Future hubby gets home this weekend!

Jamie Eason Turkey Chili

I’d like to start off by saying… Boomer Sooner!!!! Today was the most wonderful college football weekend; OU/TX. And not only did I go to OU for 3 years before heading to nursing school but my parents went there, my brother went there, my grandfather taught there… basically it’s a family thing. So, instead of going to the gym (oops) I spent my afternoon watching OU run over TX and other rivalry games.
I did do some physical therapy stuff so I got a bit of a leg workout in (some lunges) but… that’s about it.

Okay, I’m done with my shameless football commentary. Here’s the delicious chili I made a couple days ago:

It’s the Jamie Eason Recipe. The only thing I changed was using real brown sugar and no vinegar so, I’d love to take credit but… it’d probably save you time to just go to her link 🙂 **Oh, I couldn’t find a “tri-blend” so I just bought 1 can of black beans and 1 can of red kidney beans.

 

Apple Spiced Pork

Yesterday I got side-tracked by the inspiring bloggers post so today I’m writing about the spiced apple pork from Tuesday night. First of all, it’s delicious.

Here’s what I did:

  • pinch of salt
  • 1 teaspoon ground coriander
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Pork tenderloin- center cut/lean cut (cut into strips)
  • Canola oil cooking spray
  • 1 tablespoon butter
  • 1 1/2 thinly sliced unpeeled Gala apples (I think I used basically 2 medium apples)
  • 1/3 cup thinly sliced shallots
  • 1/3 cup apple cider
  • 1 teaspoon fresh thyme leaves
  1.  Heat a large skillet over medium-high heat. Combine first 5 ingredients; coat pork. Coat pan with cooking spray. Add pork to pan; cook pork until almost done (about 3-5 min/side).
  2. In second pan, melt butter and swirl to coat. Add apple slices, shallots, and thyme; sauté until apple starts to brown. Add apple cider and pork to pan. Lower the heat and cook until pork is done, stirring occasionally so apples don’t burn

Plus, here’s my workout from today:

PT lunges and deep squats (all just slow, controlled, trying to stretch my range of motion)

1 min balancing/foot

Then…

15 bicep curls

15 skull crushers

20 lateral shoulder raises

20 slow crunches (2 counts up, 2 counts down)

*3 sets

20 Resistance Band Rows

15 chest presses

20 oblique crunches/side (on the last set I did Russian Twists instead)

*3 sets

Finished up with some fine muscle drills from physical therapy and am now icing… had to stay at home so I wasn’t tempted to push farther than I should. I’ve said it before: I’m not used to being this good after an injury. It’s frustrating feeling held back but trying to remind myself (and have friends remind me…) that I’d much rather be able to dance at the wedding and hike on the honeymoon than get a 20 min bike/cardio in today.

Wow, thank you to One Fit Mama and UberBeastMode for nominating me as an inspiring blogger! They are both so supportive and inspiring themselves that it means a lot to me! Although now I guess I’m not allowed to nominate them??

About Me… it might sound weird but, thinking of 7 things to share is really hard!

1. I’m obsessed with coffee. Way more money goes to Caribou than should, even when I’m being good and “only” going twice a week…

2. In honor of football season, I love college football but could care less about Pro… I will yell at the TV when Oklahoma isn’t playing well but just watch the pros when it’s a good game.

3. I’m afraid of big birds… they freak me out. And bees. Basically anything that can fly and attack me.

4. I love to cook, sometimes I’m too lazy to do it but I really truly like grocery shopping and cooking. I think it’s relaxing.

5. Most readers know this but, I’m getting married in a couple weeks to a wonderful US Marine.

6. I move around… a lot. I’ve lived in 7 states and I’m really excited to move around more and travel after the wedding. I love meeting new people and seeing the differences, even just in the U.S.

7. I hate long runs, I really just get bored. However, I love the 5k obstacle runs. Once my foot is fully healed I want to start running in more of those and, maybe, even take them seriously.

Protein Cinnamon Bread

Fall is here!! So tonight I made a protein cinnamon swirl bread and an apple pork tenderloin… yum! I’ll post the tenderloin tomorrow but for now…

For once I followed the recipe pretty closely, I’ll bold the things I changed.

Here’s what you’ll need:

Almond milk

Cinnamon

Low fat Organic Vanilla Yogurt

Apple Baby Food (or just natural apple sauce)

Vanilla Whey Protein

Oat Flour (**I use a gluten free blend; Namaste Perfect Blend is my favorite for baking)

Truvia and Splenda (I used the Splenda in the batter and the Truvia to top… but mainly because I’m trying to get rid of my Splenda, I prefer Truvia)

Egg whites

1. Preheat oven to 350 degrees.
2. Mix the following ingredients together in a small bowl & set aside:
– 1/3 cup Truvia
– 2 tsp cinnamon
3. Mix the following ingredients together in a large bowl:
– 1 1/2 cups of Gluten Free Flour
1.5 scoops vanilla whey protein
1 tsp baking powder
pinch of salt
– 1/2 cup Splenda
4. Mix the following ingredients together in a small bowl:
– 2 egg whites
– 1 cup unsweetened almond milk
– 1/3 cup or 4 oz of apple baby food
– 1/4 cup low fat organic vanilla yogurt

**I’ve never understood why you mix things in 2 different bowls. I mixed the dry ingredients and then added in the wet ingredients and mixed it all together again.
5. Spray 8X8 dish with canola oil spray.
6. Pour a shallow layer of batter into the dish .
7. Sprinkle heavily with half of the cinnamon/sugar mixture (from step 1).
8. Repeat with the remaining batter & add the remaining cinnamon/sugar mixture on top.
9. Draw a knife through the batter to marble **make sure to do this, I didn’t for the last layer and had a bit of a sugar crust on top, still delicious but not as pretty

10. Bake for 25-28 minutes

*My dad had a piece and really liked it too. Might not look like much in the picture (I need to get better at that) but,  it’s so good!
