Back to Work

Well… good news! At the end of May I got cleared to go back to work, full duty. It was a bit of an adjustment to jump right back in and I’ve been trying to pick up at least one mini-shift each week on top of it to make up for some lost time and get a few extra hours before we leave for Italy later this summer.

Jumping right back in has also been a quick reminder that I’m not 100% yet so workouts have still been a little lighter than normal. I’m getting great use out of the home workout DVDs I bought for that very reason. I already told you what I thought about Pop Pilates so I thought I’d also include my mini-review of Yoga for Beginners by Bodywisdom.

What I like: you can make the workouts as long or as short as you want. They break it up into mini-routines so you can work out for 10 minutes or 60 minutes.

It’s also very easy for yoga beginners (yours truly) to follow. It moves at a pretty slow pace so I never felt lost.

The flip side: Because it moves slow I didn’t always feel like I was actually working.

Bottom line: I still have a couple of the routines to try but all in all it’s a great way to unwind and relax after a busy day or to use as an active rest day but it won’t be replacing a full workout. I do really like adding it in at the end of doing my PT (lots of core) exercises for a little extra boost.

Other than that, still struggling with getting into a solid meal prep routine so I’d say I wasn’t completely successful with that May goal but I have been doing at least SOMETHING 5 days a week and stretching more, so that’s a win.

Meal Prep

Apparently I’m going back to work tomorrow. I got a phone call this afternoon that they had a light duty position and I should report back in at 0830 tomorrow morning. Needless to say I was a little surprised.

After my initial panic of realizing I have no idea what that means (and I suspect scrubs won’t be appropriate) I realized I should probably get some meal prep ready. I still have some of my Santa Fe Chicken left which meant I only needed to make some snacks and breakfast food. Then I realized I don’t have enough eggs to prep both snacks AND breakfast. I’d already made granola earlier this week so snacks won.

Jamie Eason Turkey Muffins are currently baking in the oven (and smell delicious). These are great for a quick snack or a lunch options with some veggies on the side.

I still need to make some protein bars but that may have to wait until tomorrow when I buy more eggs or this weekend. I think my favorite bars are the cinnamon bread ones but I’ve been seeing some new recipes I want to play with if time allows.

Aside from my frantic meal prep I had a great workout day today. Got up early and a friend came over to walk the pups with me and then I went to the gym with another friend for a full upper body workout.

Crockpot Santa Fe Chicken

I don’t know about you but when I’m using my Crockpot I want a recipe that is just throw it in and go. Nothing I have to keep checking on or adding to or… well, you get it. So yesterday when I was doing some meal prep I was trying to find a new recipe but finally just used a few different recipes as a guide to come up with a simple Santa Fe Chicken.

ImageYou’ll need:

  • 10 oz can diced tomatoes and green chilies
  • 6 oz water
  • 1 can black beans- rinsed and drained
  • 4 cloves garlic- sliced
  • 1/2 onion- chopped
  • 1 tsp cumin
  • 1/2 tsp dry mustard
  • 1 1/4 tsp cayenne
  • 3-4 chicken breasts

Combine all ingredients in Crockpot. Place chicken on top and cook on high for 4 hours.

Serving suggestion: add in some quinoa

 

Here we go again…

Just when I thought we were hitting a routine and I was getting back to my 4-5 days (I’ve been doing really well!) we got orders this week for our next move! Looks like the end of April I will be moving back to the U.S. I am very excited to be getting to the D.C. area but it means a crazy next 6 weeks!

I think it’s time to do some meal prep and cook a ton of meals for reheating during lunch time 🙂
