What I’ve done instead of Facebook…

I hadn’t realized how much of a habit checking Facebook had become. Especially with smart phones it has become so easy to just tap the little icon while I have 5 min here and there or get out the computer just to check e-mail and pay bills and then an hour later still be looking through news feed pictures and Pinterest.

On Monday I had a day off and instead of spending my afternoon wasting time on Facebook etc. I got a short at home workout in and had a baking afternoon.

I had to do a light workout because of some medical testing they were doing so the at home workout looked like this:

2 sets:

  • 20 squats
  • 20 side squats/leg

2 sets:

  • BOSU planks with leg raises (15/leg) followed by leg abduction (10/leg)
  • 20 BOSU push-ups

2 sets:

  • 15 Hamstring bridges
  • 10 squats with medicine ball twist

Then I made granola for the week and a new variation of carrot cake bars. I adapted Jamie Eason’s recipe to make it gluten free and I’m not a fan of any of the artificial sweeteners, even Truvia (which is only like 1% actual Stevia), so I’m experimenting with honey. What substitutes do you use while baking?

Carrot Cake Protein Bars:

  • 1 C almond flour
  • 1/3 C honey (I’m still playing with this ratio)
  • 2 scoops Vanilla Whey Protein
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp all-spice
  • 1/8 tsp ground cloves
  • 4 egg whites
  • 8 oz carrot baby food
  • 4 oz water
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  1. Mix all dry ingredients together
  2. Add in wet ingredients
  3. Pour batter into lightly greased baking pan (I use canola oil)
  4. Bake at 350 for approx 20 min

Relaxing… what’s that?

This is the first weekend, possibly since we’ve moved back to the states, that I haven’t had anywhere to be and it’s been great! I got the house cleaned (new puppy likes to leave food trails around the living room) and even made some protein bars and chicken for the upcoming week. All that’s missing is hubby but he should get back from this trip sometime early this week!

My cardio lately has been taking Maia (the new puppy) out for lots of walks. She’s a Cane Corso (an Italian Mastiff) and is only 1 year old so is basically a 70 lb ball of energy. Which is great because it means I’m walking at least an hour total everyday and having to use some core etc. since we’re still training her to stop pulling on the leash when she gets excited. The down-side is with hubby gone, it’s been harder to get her all her exercise and get my gym time in but I’ve been getting in home workouts so I haven’t lost out too much. Plus she’s adorable 😉

ImageToday I made Carrot Cake Protein Bars, based off Jamie Eason’s Recipe but with a few modifications.

You’ll need:

  • 8 oz Carrot baby-food
  • 4 oz almond milk
  • 4 egg whites
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/8 tsp cloves
  • 2 scoops Vanilla whey protein
  • 1 C “clean” flour (oat, almond, etc. I use a GF blend)
  • 3/4 C Stevia, Splenda, or Truvia
  • 1/4 tsp baking soda
  • 1/8 tsp salt

  1. Preheat oven to 350F
  2. Mix together flour, protein, cinnamon, allspice, nutmeg, cloves, baking soda, and salt
  3. Add in almond milk, baby food, egg whites and then Truvia (or substitute)
  4. Spray baking pan with canola oil spray and pour in batter
  5. Bake 25-30 min
  6. Enjoy!

Photoshoots… can’t hide anymore

I had a lot of fun on the shoot this weekend but it convinced me of two things… 1. I need to find someone out here who does tans and 2. I need to stop slacking on my diet. (To be fair I’ve been better the past week so, just need to keep it up) The lighting was completely different than other shoots and it was the all white background which meant no hiding and/or cheating 😉 Hubby came with me which was really fun. Since he’s been deployed and we’ve been long distance, this was the first time he got to come with and see what it was all about.

Breakfast was 2 egg whites, 1 egg and a piece of the protein cinnamon bread. About to hit the gym and then running around trying to get through all the red tape to volunteer as a RN out here. I’m heading back to the states for a bit at the beginning of Feb. and I’m hoping once I get back I can hit the ground running at the hospital but… who knows at this point.

Back… for real this time!

Happy New Year!! This year I really want to work on finding the balance between my fitness goals and everyday life. I’m hopefully getting into the hospital out here soon and cooking for two has been an adjustment so, time to balance it all out again.

Which, in part, starts with blogging. We finally got internet up and running at our house! It’s slow for now but it works. I have so many recipes I’ve been making and things I want to post about but instead of looking back, I’m just going to start from now.

I made a ham and sweet potato soup for dinner tonight that turned out well. Here they have the Benimo potatoes so… it was bright purple but really tasty and used the rest of our Christmas ham and the bone we had frozen. I have a shoot on Saturday so kept it simple… water, ham, potatoes, pepper (white and black), cinnamon, onions, and garlic. I made the broth first with the ham bone and spices, 1/2 onion, and 2 cloves of garlic. Then I drained it and used the broth to boil the potatoes, chopped up ham, and extra cinnamon. Took some time to boil everything down etc. but was very simple to make 🙂 I did forget to take a picture, out of practice but next time we make the potatoes I’ll make sure to post it if you haven’t seen a benimo potato before.

Other than that I made the Jamie Eason Cinnamon Bread today. I added in a pinch of nutmeg this time into the batter and I really like it. Hubby even said he’d eat the bread instead of a normal cinnamon roll so I consider it a win.

Lastly, I promised I would post the Jamie Eason Chocolate Bars again. This time I subbed in some almond meal with my GF flour… they were even better! It added just a touch more sweetness but was still totally clean. I just did 1/4 C almond meal and then the rest Namaste GF flour.

Okay, that’s all the recipes for the post! I had also said I’d post a wedding picture so, still waiting on the CD of the professional ones but here’s one our friends took. Married life has been great so far 🙂

Christmas Resolutions

Sorry (again) for the lack of posting! We don’t have internet set up in our house yet so, I’m currently at Starbucks and thought I’d post something quick. 🙂

December is just around the corner and I have lots of goals for the month. I want to share my big ones so you all can hold me accountable…

1. Get back to a 5 day a week workout routine

2. Get my house put together

3. Start making my own protein bars/clean snacks again

I’m a big believer in taking it one day at a time to reach the bigger goals but there you have it, my Christmas resolutions… because why wait another month?

(Healthy) Stress Baking

Well tomorrow is my NCLEX which meant I was trying to relax and just take it as it comes… so I kept busy most the morning, looked over last minute stuff and then had errands to run. But then I came home and was staring at practice tests, which wasn’t helping at all.In college I loved to bake but lately I haven’t even been making my protein bars, so instead of staring pointlessly at the computer screen I made the carrot cake protein bars again and am trying something new (of my own making…)

For the Jamie Eason carrot cake bars you’ll need:

2 tsp cinnamon

1 C Oat Flour (I use a GF blend)

3/4 C Splenda (or Truvia)

2 scoops vanilla whey protein powder

8 oz carrot baby food

4 oz water

1/4 tsp nutmeg

4 egg whites

1/4 tsp salt

1/2 tsp baking soda

Canola Oil Baking spray (or an equivalent)

Mix the ingredients together- I mix all my dry ingredients and then add in the eggs, baby food, and water. Make sure you get all the protein mixed in (that’s why you can see some white spots in mine, I was in a hurry). Pour into a greased baking pan and bake at 350 for approx. 20 min; Makes 16 servings, store in the fridge since there aren’t an preservatives. To convince those of you who don’t believe you can cook with baby food… you’d never be able to tell the difference (other than the mentioned protein not blended):

Chocolate Oatmeal Cookies are currently in the oven… I have no idea how they are going to turn out but if anyone cares to improve on the recipe (or try it out and see) here’s what I put together. I’ll report back on how they turn out.

2 C GF oats

1/2 C Splenda

2 scoops chocolate protein powder

1 tsp baking cocoa

4 egg whites

little water for consistency (but I think I used too much)

I’m baking them at 350… it’s kind of a combination of different recipes I found so here’s hoping they turn out well! If they do I’ll post pictures or suggest any changes tomorrow after my test and a nice long workout.
